Blame it on Rioja

Modern Rioja owes much of its early development to the winemakers of Bordeaux, who came to Rioja in search of wine to meet the demand of their markets after their own vineyards were decimated by Phylloxera in the 19th century. But in many ways Rioja is more like Burgundy. For one, like the Côte d’Or Rioja’s terroir is heterogeneous and can change rapidly from one vineyard plot to the next. Also like Burgundy, Rioja is composed of small vineyard plots owned by myriad grape growers, a fragmentation that has made it difficult for large bodegas to own significant contiguous landholdings. As a result, most bodegas buy in grapes from many sources. To give you an idea, there are around 500 wineries in Rioja and about 20,000 viticulturalists.

One way that grape growers have responded to this model is to form cooperatives, in order to negotiate better prices with the large bodegas. Some of these unions of grape growers have gone on to create their own wineries as well. One the most important of these is Bodegas y Viñedos Labastida, based in the town of the same name. They export all three of their brands–Solaguen, Castillo Labastida, and Manuel Quintano–to the U.S., and their wines have consistently received high critical marks in the U.S. press.

We spent a few hours with winemaker Manuel Ruiz when we visited Rioja last fall, who explained the cooperative concept.

“The basic structure of the family economy in upper Ebro valley hasn’t changed much in the last 150 years. Winemaking methods were of course much more rudimentary back then, but viticulture as the key component of the family economy had already been well established by then. And just as winemaking functioned in those days without the existence of the large bodegas, today that same economy maintains itself through continued individual ownership of the vineyards by the families who work them.

“As the industry grew and the model began to shift, there were disagreements over the price of the grapes between individual grape growers on one hand and the big wine companies who bought grapes from them. On many occasions, grape growers felt discriminated against, and perhaps this is the reason for the establishment of many of the cooperatives. Unions of grape growers established themselves, first, to defend their common interests and then, from there, some of those cooperatives took it a step further, dedicating themselves as well to wine production and marketing, a move that I think has made a significant contribution to providing for economic stability in this sector of the industry.”

Apart from being the essential guide to anyone interested understanding the science of food, Harold McGee’s On Food and Coooking (Scribner, 2004) is filled with aphorisms of great resonance and economy. My favorite among them, which I first encountered as a quote in Peter Kaminsky’s terrific book on pork love, Pig Perfect (Hyperion, 2005), has become something of a mantra for me:

“Rotten grapes (wine), moldy milk (cheese), and ripened meat (ham) make our lives more interesting.”

Potatoes have become something of a theme for me this past week.

Working my weekly maitre d’/sommelier shift at Chanterelle on the first day of a menu last Monday, I had a spoonful of David Waltuck’s Olive Oil Mashed Potatoes (bound with olive oil instead of butter, flavored with roasted garlic), a key component to David’s crispy-skin New Zealand Snapper with Bouilabaisse Broth. I just happened to be in the kitchen when David placed a saucepan of that hedonistic stuff on the hot slide just after a big pick up.

The degree to which my head tilts back in pleasure on my way to the dishwasher station to drop off my spoon in the silver soak is usually an accurate measure of how much I’ve just enjoyed something, and I am pretty sure an outsider looking into the kitchen at that moment would have been convinced that I was engaged in some kind of limbo lunge under an unseen pole.

Potato Lover’s Month at Gourmet
On Thursday, I opened my weekly newsletter from the revamped Gourmet.com to discover that February, according to Gourmet Editor-in-chief Ruth Reichl, is officially “Potato Lover’s Month,” an occasion she celebrates with links to four potato-based recipes and another to “Heirlooms-to-Be,” a recent blog post by Cristy Harrison on Gourmet’s new interactive website (very impressive, by the way, if you haven’t checked it out yet) about two promising new potato hybrids created in the last five years by scientists at Cornell University, the Adirondack Blue and the Adirondack Red, bred specifically for taste and performance in the kitchen.

For Cornell potato breeder Walter De Jong, Ms. Harrison writes, “culinary quality trumps other agricultural factors like yield and pest-resistance. What’s more, Cornell researchers have worked with culinary students at the CIA and elsewhere to test the Reds and Blues in various dishes, and ‘we are using chefs’ feedback to develop even better future varieties,’ says De Jong.”

Potato Apotheosis: A Match for the Ages
Potato Interlude 2008 reached its high point on Tuesday night, however, on the beautiful and blustery evening my friend, fellow close Dylan listener, and Chanterelle line-cook Charles Imbelli (he made an appearance on BIOR once before, in a post on a fishing trip we took late last summer) and I met uptown for an evening of uniform deliciousness at Thomas Keller’s per se restaurant in the Time Warner building on Columbus Circle.

All twelve courses were so good, so consistent, such little marvels of harmonic flavor concentration and uncompromising product sourcing and technical execution, it seems a little unfair to single out one dish, but the cheese course, combined with the wine I chose for the meat and cheese courses, La Rioja Alta Viña Ardanza 2000 Rioja Reserva, just so completely knocked me out at a point in the evening when I didn’t think anything else could knock me out, that it merits special consideration.

The cheese course was Pyrenées Ossau Vielle (an aged, very buttery, and slightly ‘lamby’ sheep milk cheese from the western Pyrenées of France) served with Twice Cooked Red Bliss Potato and Applewood Smoked Bacon Vinaigrette. I am still thinking about it longingly a week later. The texture and intensity of the cheese, the way its fattiness just seamlessly melded with the creamy potato mash inside the shell of the Red Bliss’s skin, and the way everything came together under the heady flavor spell of that awesome bacon vinaigrette, it was just…wow. A sip of the Viña Ardanza, earthy, tart, wintery in its own right, measured in its fruit, and we had on our hands a match for the ages.

After a moment of silent reverie, and a grateful-to-the-universe look outside the window toward Central Park, I turned to see what Charles thought.

“Man,” he said, “I wish I could wake up to that every morning.”

That makes two of us.

Late last week, an email newsletter from the East Village Spanish wine shop Tinto Fino alerted me to an article that recently appeared in The Wall Street Journal monthly, SmartMoney: “Is Spain the New Bordeaux?”.

James B. Stewart’s “SmartSpending” piece chronicles an informal blind tasting he recently organized in which wines from two top Bordeaux properties, Cheateau Pape Clement 2004 ($80) and Chateau Mouton Rothschild 2004 ($275), were tasted alongside a broad range of ten Spanish wines selected by Tinto Fino’s Mani Dawes, the idea being to test Spanish mettle against a category of French wine that’s quickly becoming a stand-in for both inflated pricing and a weak dollar.

“The results confounded our expectations,” Stewart writes. “Of the many tastings we’ve done, this was perhaps the most humbling — and enjoyable.” Once the panel determined their top four wines, the labels were revealed. Viñedos de Contino’s powerhouse Viña del Olivo Rioja 2001 was the overwhelming favorite: “We couldn’t get enough of this. We found its nose elegant and its taste rich, full, a bit tannic; it boasted a long, velvety finish. It won two votes as a Bordeaux, but others found it a little too extroverted to qualify. Though steep in price [$125 for a 750ml bottle], it’s still a bargain by first-growth-Bordeaux standards.”

Next came El Bugader Montsant 2004($63), followed by Valbuena Ribera del Duero 2001 ($125). Pape Clement, the panel’s number four pick, was the sole Bordeaux to place.

Admittedly, young wines from a problematic vintage* do not a great property define. One must also consider the fact that the instant Mr. Stewart decided to ask Ms. Dawes to select the Spanish entrants, France was at an immediate disadvantage; few in the business know Spanish wines like she does, and her palate judgments, if the wine selection at Tinto Fino is any indication, are impeccable.

Still, I suspect that this is not the last time we hear about the wine cognescenti looking south towards Spain for wines that offer stunning quality without the ‘dollar hangover.’

As Spanish winemakers keep ratcheting up quality and wine consumers continue to educate themselves about killer wines made south of the Pyrenees that won’t break the bank, new and established brands in Rioja and beyond will start looking sweeter and sweeter to serious wine collectors and consumers alike.

We very well could be at the beginning of a paradigm shift. In many ways Spain has already trumped France in the world of gastronomy. Could the world of wine be far behind?

It’s that time of year when one of viticulture’s most bracing demands comes a-callin’: the winter pruning of the vines.  By clipping the canes of each plant after the vines have shut down for the winter, a wine grower can reduce the quantity of fruiting buds and, therefore, improve the quality of the buds that eventually flower and bear fruit later in the season.

In Western Europe, the practice of grilling meat over the smoldering embers of vine clippings dates back several thousand years. In Rioja, the ancient practice of cooking meat over sarmientos in fact came to define the regional cuisine, and today traditional asadores, restaurants specializing in grilled meat, are still everywhere, thriving even as edgier cooking has made its way into the valley.

At the same time, Rioja’s cuisine helped to shape the evolution of its wine.  John Radford points out in Wines of Rioja that, even if it were possible, it’s unlikely that a red wine like Rioja would have fared very well along the seafood-rich estuaries of coastal Galicia. In other words, razor clams and sea scallops called out for high-acid, aromatic whites (i.e., Rias  Baixas, Ribeiro, Valdeorras); in Rioja, grilled baby lamb chops, or chuletillas de cordero, called out for something quite different.

And speaking of lamb chops, a reader named Marco Romano left a comment on one of my most recent posts and confessed that “Rioja is the wine that turned me into a lover of wine with food. Grilled lamb chops marinated in olive oil, garlic, pimenton, cumin and arbol chilies over charcoal with a Rioja reserva. Ah…”

Of course, I immediately asked for a recipe, and he quickly complied.

As for the grape vines, well, that’s the hard part.  A 2006 Wine News article on cooking with vines, written by Carole Kotkin, suggested contacting Kalmazoo Outdoor Gourmet, which sells grape vine chips, although I took a look at the website, and “grape vines” appears to be missing from the order form, even though it’s mentioned as an option on the product list. A phone call is definitely in order.

Or you can do what I plan to do next week, after I get back from Napa: call your nearest winery.

Grilled Marinated Lamb Chops
Recipe submitted by Marco Romano
4 loin chops, or 8 baby loin chops (chuletillas), if you want to get really authentic
1/4 cup olive oil
1 tsp. sherry vinegar
3 cloves roasted or raw minced garlic
1 tsp+ pimenton
1 tsp+ ground cumin
Ground arbol chilies* to taste
Salt & pepper

Mix the oil and vinegar with the garlic and spices, and marinate lamb for 2-4 hrs. at room temperature. Grill over hardwood in an outdoor pit.**

*Chiles de Arbol, usually sold whole, are available at Latin markets across the country and at select Whole Foods.

**A good substitute for vine chips would be chips of some easier to find fruit woods: apple, apricot, cherry, nectarine, or peach.  Check out barbecuewood.com or kalamazogourmet.com.  I must confess that I have never cooked with wood before, but the three websites linked in this post seem to have enough information to steer us in the right direction. Still, proceed with caution.

Among my colleagues on the restaurant side of the wine trade, it’s become fairly axiomatic that writer Matt Kramer is the best (some say only) reason to read Wine Spectator Magazine. If you aspire to an advanced understanding of the aesthetics of wine connoisseurship, look no further than Mr. Kramer’s Making Sense of Wine, a fine example of essential reading that’s also a pleasure to read.

While admittedly not an avid television watcher, I’d be lying if I said it wasn’t pretty damn cool to lead a Rioja tasting a few weeks ago at the studios of photographer Nigel Barker, a judge on the CW Network’s America’s Next Top Model.

Mr. Barker is a professed fan of Rioja and of pretty much all things Spanish, having lived in Spain for many years with his family, and he struck up a friendship with Vibrant Rioja’s Kendyl Wright during September’s Fashion Week, for which Rioja was the official wine. In the event, Kendyl arranged for a tasting at the photographer’s studio in the Meatpacking District in early December and asked me to lead it.
